Apprentice Chef - Zeffirellis Cinema & Restaurant & Jazz Bar

Background to employer: Zeffirellis is located in Ambleside, Cumbria. We have been trading for 37 years. We have 2 busy restaurants, a Jazz Bar [serving food] and 5 cinema screens showing all the latest movie releases. We are fully vegetarian and are always busy with an average of 300 covers 

Brief overview of the role:  The trainee chef will learn how to prepare and cook high quality vegetarian food using high quality ingredients and develop a sensitive palate. The trainee chef will be guided to take a full part in service covering all stations and grow an understanding of the organisation of a busy kitchen.

The candidate should be ambitious and self-motivated and respond enthusiastically to new and exciting challenges in an extremely busy environment. 

There is a possibility of working in both of our restaurants – Zeffirellis with 180 covers, fast and furious and Fellinis 80 covers a little more refined.

We deliver Vegetarian Food at its best and the chosen applicant will have the chance to learn and develop to the highest standard.

Training will be given in all aspects of the prep of dishes and service. The Head Chef will supervise the trainee and guide them during their training.

The Chef prepares food for the Restaurant service. To practice portion control, quality control, waste control and product preparation techniques.

Responsibilities and duties:

Assist with the daily preparation for food service
Ensuring that all dishes are prepared and portioned in accordance with specified recipes.
Take part in daily service and clean down after service
Implementation of Health & Safety, HACCP and Fire procedures
To report faulty equipment immediately.
Ensuring that a high standard of personal hygiene and grooming is adhered to by all staff at all times.
And any other reasonable requests made by management

Hours of work, Pay and Benefits:

Average 40 hours per week
Shifts may be split i.e. 10 – 2pm and 5 – 11pm but will vary as required
Shifts will involve weekend working
2 days off per week. Whilst we will endeavor to have 2 days together during busy periods this cannot be guaranteed
Hourly rate TBC
Tips – usually worth an additional £50 - £70 per week
Food whilst on duty
Uniform is supplied but you must launder it yourself
Free membership of the local gym and swimming pool.

Requirements and Prospects

Desired skills:

Experience or training in a kitchen environment is essential.
Knife skills and an understanding of kitchen routines such as hygiene and cleaning is also essential.

Personal qualities:

Hard working
Enthusiastic
Willing and able to listen, watch and learn
High degree of commitment
Good in a team environment working in close proximity to others in a fast and efficient manner

 

Qualifications required:

Basic food hygiene certificate (not essential).
NVQ level 1 or 2 (not essential). 

 

Future prospects: The position could become a full-time permanent position if the trainee fulfils their training development opportunities.

Things to consider:  We are in Ambleside therefore a candidate must be able and willing to travel here. Accommodation may be available. The candidate must be prepared to work hard and to show commitment. Candidates considering this opportunity who may initially be deterred due the vegetarian menu. However the candidate should consider this as a great opportunity to acquire skills which are quite rare in the industry. This will make the candidate more attractive to future employers, not just vegetarian restaurateurs, because knowledge of how to produce high quality vegetarian food rather than ‘veggie burgers’ or ‘garlic mushrooms’ will be an asset. Wage Information: 40 hours per week [hours may vary up and down] including one day at College Hours and days worked will be agreed with the Head Chef in advance Hourly rate will be discussed with the candidate and depend upon their age but as a starting point the minimum will be £5.50 per hour plus tips.

PROFESSIONAL COOKERY, LEVEL 2 APPRENTICESHIP

The Hospitality Apprenticeship is a 12-18 month programme. 

The Apprenticeship has a variety of routes for people working within the Hospitality Industry. The Apprentice Framework includes the Level 2 Diploma in Professional Cookery, Food and Beverage Service, Housekeeping, Hospitality Services or Front of Office which are competency based qualification. The Diploma has a variety of mandatory units including Health, Safety and Security, Effective Working Relationships, Food Safety, and Customer Care. The learner then chooses from a selection of optional units relevant to their chosen route and workplace. 

The Framework also includes a Technical Certificate which is the Level 2 Certificate in Hospitality Practices and Principles.

Part three of the framework includes Functional Skills in English and Maths are also part of the framework . (Previous qualification in English and Maths can form exemptions for the function skills).

What will I learn?

Skills and knowledge will be delivered in the following areas:

- Health Safety and Security
- Effective working Relationship
- Customer Service

Specific skills will also be developed in your chosen route:
